Alright, so this is the first of a new series that I am doing. With the start of my six month weight loss challenge yesterday, I decided to share my daily eats with the world--daunting I know, but hey, why not?
Well, I just finished eating lunch and I thought you guys would like to see what I had. It's a simple meal anyone can make, plus won't break the bank. :)
Yay!
What you will need:
1 cup black beans
1 cup brown rice
2 drops cilantro paste
1 small avocado (diced in half)
2 wheat tortillas (or flour)
2 tbsp evoo
Shredded lettuce
Diced tomatoes
2 Tbsp Greek yogurt
Pinch Onion soup mix
Pinch taco seasoning
Cooked rice
Cooked beans
First, I started out by gathering my ingredients: veggies, taco seasoning, beans, extra-virgin olive oil, water (for the rice), and went to town.
1.) Boil Water, once at the correct temperature add the rice. Here, I'd suggest cooking until the water is low and then add-in your cilantro and lime juice.
2.) Create avocado spread. I'll admit, I'm not the best with making guacamole, but I try. Yet, today, I wasn't feeling it, so I decided to try something different. Basically, I cut a small avacodo in half and chopped. Then I grabbed my trusty magic bullet and dropped in a few cubes along with cherry tomatoes and red onion. I added a dash of pepper and blended. Easy-peasey.
3.) As a replacement for sour cream, I grabbed a tub of plain Greek yogurt and added a few pinches of onion soup mix. Overall it's a beautiful, tasty result.
4.) Last but not least toast your tortilla rounds. I don't own a press, so I subbed using a pan sprinkled with olive oil. I've found the oil gave the tortilla an interesting flavor.
With these four steps complete, you are ready to build your tacos!
I ate mines like a fiend.
Oh, by the way, for your meat you can use anything. I used leftover beef roast. 😊
