Food/Activity: Wednesday, 1/7/2015



Today was one of those days when I didn't feel like eating much . . .

Food was the last thing on my mind or even making it. I know that I should be careful due to blood sugar spikes and such, but hey sometimes a girl ain't feeling it. :p

-Drinks-
Water: 5 cups
Tea: Nope
Apple cider: 1 cup

-Food-
Breakfast: tangerine 
Morning Snack: Kale juice
Lunch: Nothing 
Dinner: Sautéed turkey breast w/mixed veggies.
Evening Snack: Half of a PBJ sandwich.

-Exercise-
Morning: None
Afternoon: None
Evening: None 

Slow and lazy day for me, I didn't do a thing.

Food/Activity: Tuesday, 1/6/15

2nd day of my challenge and below is what I had.

-Drinks-
Water: 5 cups

Apple cider: 1 cup

-Food-
Morning Snack: Peanuts (handful); Colby Jack cheese

Lunch: Soft Tacos 

Dinner: Baked Fish w/ veggies 

Evening Snack: 1 cookie 

-Exercise-
Afternoon: Cleaning 

Evening: None

Recipe of the week: Healthy Soft Tacos


Alright, so this is the first of a new series that I am doing. With the start of my six month weight loss challenge yesterday, I decided to share my daily eats with the world--daunting I know, but hey, why not? 

Well, I just finished eating lunch and I thought you guys would like to see what I had. It's a simple meal anyone can make, plus won't break the bank. :) 

Yay!

What you will need: 

1 cup black beans
1 cup brown rice 
2 drops cilantro paste
1 small avocado (diced in half)
2 wheat tortillas (or flour)
2 tbsp evoo
Shredded lettuce 
Diced tomatoes 
2 Tbsp Greek yogurt 
Pinch Onion soup mix 
Pinch taco seasoning 
Cooked rice
Cooked beans 


First, I started out by gathering my ingredients: veggies, taco seasoning, beans, extra-virgin olive oil, water (for the rice), and went to town.


1.) Boil Water, once at the correct temperature add the rice. Here, I'd suggest cooking until the water is low and then add-in your cilantro and lime juice.

2.) Create avocado spread. I'll admit, I'm not the best with making guacamole, but I try. Yet, today, I wasn't feeling it, so I decided to try something different. Basically, I cut a small avacodo in half and chopped. Then I grabbed my trusty magic bullet and dropped in a few cubes along with cherry tomatoes and red onion. I added a dash of pepper and blended. Easy-peasey. 

3.) As a replacement for sour cream, I grabbed a tub of plain Greek yogurt and added a few pinches of onion soup mix. Overall it's a beautiful, tasty result. 

4.) Last but not least toast your tortilla rounds. I don't own a press, so I subbed using a pan sprinkled with olive oil. I've found the oil gave the tortilla an interesting flavor. 

With these four steps complete, you are ready to build your tacos! 


I ate mines like a fiend. 

Oh, by the way, for your meat you can use anything. I used leftover beef roast. 😊

Wow, would you look at that!

No joke. My scale is broken! 

So this morning I decided to weigh myself in order to pinpoint where and how I should go with my plan. I was like, okay, cool I have my little notebook with my date jotted down and then I got on the scale ---- nothing. Um, ok? So to make a long story short, I tried changing the batteries, that'll do the trick. Ok, so I got on, waited. Where's the beep? Nope, nothing.

   Well, I'm getting ready to post my first vids to my channel, yaaaaay! I haven't a clue what I'm doing but dude, it's going be fun I know it. But first I gotta buy a scale!

Eating French Fries

So while I was sitting here smashing on fries (oven-baked) and I couldn't help but think, how exactly should I kick-start my project? Losing weight is hard, I hate exercising and yes I said it, the crap hurts. Waking up feeling like you've been in a boxing match is no joke. I remember my first day at Nu Life Fitness Bootcamp my bones were singing, I had to nearly shuffle to the car and go home to soak. Ugh! I didn't like the burn. It cracks me up it takes nothing gaining this shit but it takes a long ass time lose! What The Fuck? See I had to spell it out!

BUT

I saw results. During my tenure with NuLife I've lost over 50 lbs and would've been to my goal if I haven't been sidetracked. I went into mourning and that was it for me; it's almost amazing how one life changing event can throw everything off. And ya'll, guess what? I've gained all of my weight back and then some, I can't even fit into my jeans. WTF! So I've been planning and I've decided. I shall be losing weight and lose it for good!
